This may be the most delicious potato dish that I have ever made. I’m not talking about the traditional potato salad kind, but the raw, unprocessed variety. The raw potato itself is the star of the dish, so I guess that makes this the recipe for the first recipe in my new book, The Whole-Potato Life.
